- 2 tbs olive oil
- 2 roughly chopped onions
- 3 diced tomatoes
- 10 eggs
- 100g (4oz) grated cheese
- 10 pinches Spicy Southwest Gourmegg Seasoning
1. Heat 1 tbs olive oil in a pan, fry the onions for 4-5 minutes on a medium heat. Add the tomatoes and cook for 10 minutes. Let cool.
2. Whisk eggs in a big bowl. Add the cheese and stir in the tomato mixture.
3. Heat the remaining oil in a large frying pan and pour in the egg mixture, stirring until it begins to set. As the eggs continue to cook pinch in the Spicy Southwest Seasoning. Let cook for about 6-10 minutes.
